Any one that you haven't learnt how to use properly! They all offer the same things
really, just differing workflows. I guess Pro Tools (HD) has VCAs, which most DAWs don't
offer, but other than that they all will do the job of recording and mixing the same.

round to using yourself... bit like all gear and techniques really... you only find out by
DOING in the context of wider information.
Audio isn't an area for endless
theories and comparisons... in my pre-retirement career we had an expression about
"analysis paralysis"... you only REALLY learn by getting your hands dirty. For instance,
many years ago when I had a very simple mixer I couldn't really understand what "variable
Q" was all about. It was only when I got my hands on some gear that allowed you to vary
the Q that it all became much clearer and snapped into focus.
