I see this crop up as an option when I do my public liability. Is it something I should think about getting or does it not really apply to sound engineering?

Doesn't really apply, PI is for architects, structural engineers, folks with design responsibility like that.

It is both expensive and needs to be kept up for years after your last job as a claim could be made a long time after your last job was completed.

You really don't want to go there, unless you do fairly high end consulting.
