Hmmm... just a thought, and I haven't tried it myself. But I'll chuck it into the mix anyway....

As it generates an analogue signal from a piezo you might get some good results by recording it straight into your DAW and then using a beat extraction tool to generate MIDI and/or trigger a sample with the dynamics of your playing.
