Just track everything in stereo straight into your audio interface’s line inputs. Occasionally you’ll come against a keyboard that has a strangely low/high output, but in general it’ll work no problem.

I’d always track in stereo with as short/clean a signal path as possible. Any decision you want to make about using it in mono, stereo, re-amping or otherwise can be left until later – there no need to compromise these later decisions by how you track it.
