quite a price hike between the gx5 and gx7

the 5 will do as its rated at 700w per side at 4ohm but the 7 would be better as it wont have to be driven so hard. some bass bins can be quite power hungry

bi-amping using an electronic crossover between your mixer and amps is the way to go and you will notice a big improvemnt in sound quality. also you have better control over bass/tops levels and crossver points
