I'll kick off with a few of my faves:
Pensado's Place - weekly video programme hosted by Dave Pensado. Includes interviews with guys like Bruce Swedien, Tony Maserati, Michael Brauer, Charles Dye...
Guardian's 'How I Wrote...' series - artists talking about their inspiration and methods of songwriting, then performing them. Look out for great stuff from PJ Harvey, Elbow, Anna Calvi, The Kills, Ray Davies...
Record Producer video interviews - 252 great video chats with the biggest producers, such as Trevor Horn, Andy Gill, Bernard Butler, Ken Scott...
Mix magazine's entire list of Classic Tracks interviews - insights into many great classic recordings and how they came into being, from 1960 to 1992
The Womb Forums - the brainchild of MixerMan (i.e. Eric Serafin), with wonderful advice on Mixing (natch), recording (The Womb University), and even an archive of 'Mix-Off's' with source multitrack files and critique of the submitted mixes
Charles Dye's Hard Disk Life & Mixing Revealed series - great series on mixing in-the-box from when it was just getting off the ground, seemingly commissioned by Digidesign. The example sessions are no longer available, but there is plenty of great insights, example settings, and before'n'after sound clips.
You lot will have many more gold-mines to share as well I'm sure, but it's an amazing time to be making music with so much great tuition and insight just there for the soaking up!
