It's not a limitation of iOS, and there are certainly apps which do let you export individual tracks...eg, "StudioTrack allows you to import any mix or individual track to a computer, which is always nice..."

I guess it's possible certain apps might be limited in particular ways to encourage people to purchase the full version. (You can apparently transfer iMaschine projects to Maschine via iTunes.)
Just came across this comment re: iMaschine:
"...You can only export a single audio file (wav) so the only way to get four separate tracks is to do four exports with the other three muted..."
