I looked into this before, and found that the most flexible decent quality solution was the Matrox range of display adapters, namely the DualHead2Go and TripleHead2Go products.

They have a little guide about mac connectivity here .

You'd just need to watch the bandwidth/pixel count on each port, but I think you should be able to handle a 3 screen display (though not massive ones!) this way.
