Can I ask what are the benefits of using the micing approach in this video

And how you might deal with phase issues

I think it would have been just an option to choose either mic - not a blend of them both.

The lower mic gives the singer something to aim into - I'd think they would have used the other mic

It's very unlikely they'd be mixed together because of the phase issues you mention. So they are either using different mics for different parts of the song to get different characters (loud/soft maybe), or they were recording both mics becuase they couldn't decide which worked best and wanted options at mixdown.

It's not an unusual technique -- when I recorded the vocalists for the Selwyn jazz band in this month's issue I rigged and recorded the outputs of two mics simultaneously to give me mixing options.
