Put a hovercraft on the list as well for a modern take on jousting.
A number of students at my secondary school built a hovercraft as an out of hours club activity mentored by one of the craft teachers (I think woodwork but memory fails).
After months of construction it was duly completed. A more impressive educational project I've never seen - it looked the part, had the requisite grills over the fans, two engines, a beautifully fabricated angular body and an impressive skirt.
It worked too. It could only take the weight of a single pupil at a time though. Sadly, only two people got to have a go. Despite a dozen acres of playing field to work with, the second would-be pilot lost control and diverted it at speed directly into the wall of the canteen/school hall building.
The ensuing damage to the craft was severe, a setback from which the project never recovered, but I'm sure stories of that event were told for years afterwards.
On the bright side the canteen wasn't damaged. Much as there are tales told across the land of dodgy school dinners ours were top notch. I really felt for the club members who never got a go though.
EDIT: It was 6th form, not secondary ... long time ago!
