That's right, yes. Just drag the installer file over to your computer/another drive/cloud backup or wherever you'd like to store it, and should you decide you want to use it you can drag it back over to the drive and run it from there to install the software.
If you're planning on using the T7 to run a VI/sample library then you don't want to encrypt it anyway, it's really there as an extra security measure in the case of the drive being used for sensitive information.
Being cautious is never a bad thing, especially where things like drives and data are concerned, but in this case you've check everything you should and you'll struggle to go wrong. Format as APFS, install your library on there, and enjoy the noises! :thumbup:
