Welcome!
I'm not sure that upgrading your interface is going to give you what you're looking for.
Tell us a bit more about the rest of your gear: mic(s), monitors, headphones, DAW etc and if you've acoustically-treated your room and we may be able to offer some advice.

Re: Audio Interface upgrade
As Mike says, I really don't think swapping one good interface for different good interface is going to bring the improvements you seek.
The terms 'more clarity' and 'fuller sound' suggest to me fundamental acoustic recording or mixing issues more than anything.

And what instrument/voice/genre are you recording, tell us more about your usual mic position and a little about the treatment around your recording area?

Still taking this recording lark seriously (and trying to record my Gypsy Jazz CD)........
Re: Audio Interface upgrade
Eris monitors are okay and should deliver reasonably good monitoring in a well treated room. Cubase is obviously fine, and the C3000 mic is capable of good results too...
And all of that, combined with the Scarlett 3rd gen interface, is perfectly capable of genuine pro-level sound quality.
So I think we need to drill down a bit more about what you mean by 'more clarity' and a 'fuller sound'
Perhaps you could post a link to an excerpt of your recordings that you think illustrate the problem, and that way we can get a much better idea of how to help.
